For this meal I saute my veggie in a spicy Jerk soy sauce I mixed up together until veggies are tender. I removed from skillet then added in my chicken to cook in the Jerk soy sauce. While that was cooking, I was boiling my chow Mein noodles separately, which I know wont take too long to cook for thin noodles to cook. Once my chicken was done, I drain my noodles and let it cook for 5 minutes in the Jerk soy sauce. Then added back my veggies and toss everything together.
Arroz con Gandules
My favorite type of rice with green Spanish cooking olives.
In a rice pot, saute onions, green pigeon peas, olives, tomato, fresh parsley
Then add can tomato sauce, chicken (or vegetable broth) water. 2 packets of sazon
To not to have hard rice or mushy over cook rice , put stove on low. I put mine on the lowest level one.
You don’t want want the water to boil down and leave the rice uncooked. Leaving it on lowest temperature helps soften the rice and absorb all the flavor.
This takes about 35-40 minutes on low heat .
Don’t empty rice after cooked. Leave in pot to remain soft.
Chicken Marsala with mushrooms.
For the chicken, I coated in seasoned flour, pan fry with Evoo & Butter. Then removed chicken from skillet. Added back Evoo & Butter, saute onions, garlic and mushrooms until carmalized.
Added chicken broth and half and half creamer to thicken sauce.
Added back in the chicken, garnished with parsley.
I used varies of spices for this salmon. Black pepper, cayenne pepper, paprika, garlic powder and onion powder. I spray pan cooking spray before and after to get the spices stuck on. I pan seared skin up.
For the salsa, I diced up tomatoes, can pineapples and tomatoes with a squeeze of lime juice .
